Copenhagen runs on bikes — there are more of them than cars, and the harbour is clean enough that locals swim in it off the Islands Brygge piers in summer. Skip the grab-and-go and sit down for proper smørrebrød: open-faced rye topped with pickled herring or roast beef, eaten with a knife and fork as a real lunch, not a snack.
