Astana is a capital built from scratch on the bare steppe since the late 1990s, which is why the skyline looks like an architect's showroom: Norman Foster's Khan Shatyr, a translucent tent-shaped mall with an indoor beach (sand shipped in from the Maldives), and Bayterek, a golden-orb tower holding a gilded cast of the first president's handprint. Eat beshbarmak, the national dish — boiled horse or lamb over wide flat noodles, traditionally eaten with your hands ("five fingers"). Astana is the world's second-coldest capital after Ulaanbaatar, and that's the whole trip-planning story: come late May to early September for genuinely warm days, and avoid December–February, when nights hit −30°C and lower.
