🌍 About Fuzhou
Buddha Jumps Over the Wall — the lavish seafood-and-pork stew slow-cooked in a Shaoxing-wine jar — was invented right here in Fuzhou, at the Juchunyuan restaurant in the 1800s, and the city still does it better than anywhere. For everyday eating, get Fuzhou fish balls: a chewy translucent skin of minced fish wrapped around a savory pork or shrimp center, served in broth. The one place to walk is Sanfang Qixiang (Three Lanes and Seven Alleys), a dense grid of Ming- and Qing-dynasty timber mansions in the center, now full of snack stalls and shophouses. Fuzhou is also called the Banyan City for its old shade trees. Come October–November: warm, dry, sunny, the year's clearest skies. Skip July–August — peak heat and typhoon season off the East China Sea.
