🌍 About Amman
Amman sprawls across a tangle of steep hills, and locals navigate by *jabal* (hill) rather than by street name. The dish to order is mansaf: lamb slow-cooked in jameed, a tangy sauce made from fermented dried yogurt, ladled over rice and traditionally eaten by hand from a shared tray. Sufra, in an old villa on Rainbow Street, does the refined version; downtown near the Roman Theatre, the old falafel and hummus counters are the honest meal. Climb the Citadel on Jabal al-Qal'a for the Roman Temple of Hercules and a view over the whole pale, stone-clad city. Come spring (March–May) or autumn (September–October): warm, dry, around 25°C. Skip July and August, when it tops 35°C, and pack a layer for January — Amman occasionally gets snow.
