Georgetown sits a metre or two below sea level, which is why a stone seawall built in 1858 runs the length of the coast — at dusk it becomes the city's promenade, where people walk, sell snacks and watch the brown Atlantic roll in. The landmark to see is St George's Cathedral, one of the tallest wooden churches in the world at 143 feet, built almost entirely of local greenheart timber. Eat pepperpot, the national stew slow-cooked with cassareep, a thick black sauce made from cassava that tastes deep, sweet and faintly bitter — a Christmas dish but served year-round. Most travellers use Georgetown as the gateway to Kaieteur Falls in the interior. Come in the dry season, February to April, when inland roads and flights actually run; May to mid-August and the year-end are properly wet.
