Above the medina, the Kasbah fortress holds the widest strait views. Eat calentita (also spelled kalinti): a warm chickpea-flour tart sold from street stalls, a leftover of the city's Spanish years, served with cumin and olive oil. Best time is April–May or September–October — 20–27°C, fewer crowds, and cheaper than the hot, packed summer. Winter stays mild but grey and windy.
