Cali calls itself the world's salsa capital and means it — but the local style is its own thing: danced fast, almost frantic, all in the footwork, quicker than the music. The serious dancing happens in Juanchito, the riverside barrio across the bridge, not the tourist clubs downtown. Eat sancocho valluno, the hen-and-yuca stew from this valley, and brave a chontaduro — palm fruit sold on street corners with salt and honey, an acquired taste that's pure Cali. The city stays hot, around 30°C year-round. Go in the December–February or July–August dry stretches; December 25–30 is the Feria de Cali, when the whole city dances in the street. March–May is the wettest.
