Baku stacks a walled medieval core against some of the boldest modern architecture in the Caucasus. Inside Icherisheher, the UNESCO old town, are the 12th-century Maiden Tower and the Shirvanshahs' Palace; a short walk away the three curved Flame Towers light up at night and Zaha Hadid's wave-shaped Heydar Aliyev Center looks like it was poured rather than built. Order plov (saffron rice, often with chestnuts and dried fruit) or qutab — thin griddled flatbread stuffed with greens or lamb, eaten with yogurt. It sits right on the Caspian and earns its nickname, the City of Winds. Come April–June or September–October for mild, dry days.
