🌍 About Aleppo
Aleppo is one of the oldest continuously inhabited cities on earth, and its Citadel — a hilltop fortress reached by a steep stone entrance bridge — reopened to visitors in late 2025 after years of war and the 2023 earthquake. The dish to order is kabab bil karaz: lamb meatballs simmered in sour-cherry sauce with pine nuts, sweet and tart at once and genuinely Aleppine — you won't find it done right elsewhere. The city is also the kibbeh capital, with more than a dozen versions. The covered Al-Madina souq, 13 km of stone vaults, is slowly being rebuilt; only sections have reopened, so come knowing this is a city mid-recovery, not a polished one. Visit March–April: mild, dry, and when Aleppo is most alive. Skip July–August, when it hits 38°C.
