Sidi Bou Said, the blue-and-white clifftop village next door, is worth it for bambalouni — a hot sugared doughnut sold from a cart at the top of the hill. Eat brik: paper-thin pastry folded around tuna and a runny egg, deep-fried, eaten with your hands. Come spring or autumn — March-May or September-October — for warm, walkable days; summer bakes the open ruins, and winter is cool and quiet but fine.
