Sal is flat, sun-bleached desert — no green hills, no old town, and that's the point: people come for the wind and the water. The standout is Pedra de Lume, a salt lake inside a collapsed volcanic crater where the brine is dense enough to float you on your back like the Dead Sea. The beach base is Santa Maria in the south, one of the world's steadiest kitesurf and windsurf spots. Eat cachupa, the slow-cooked corn-and-bean stew, and order whatever tuna came off the morning boats — it's caught right here. Come December to March for the strongest, most reliable wind and dry warm days; that's also when fares and hotels are cheapest, so the good-deal months are the good-weather months.
