Trinidad is the working, music-making half of the two-island nation — Tobago keeps the postcard beaches, but Trinidad invented steelpan (beaten from discarded oil drums) and throws the Caribbean's biggest Carnival. Drive over the hills to Maracas Bay for bake and shark — fried shark in fried dough, piled with shadon beni and tamarind sauce. At Caroni Swamp, scarlet ibis fly in to roost by the thousand at dusk. Come January–May, the dry season, for dependable sun. Carnival falls on the Monday and Tuesday before Ash Wednesday (February or early March) — extraordinary, but fares and hotels spike hard around it.
