Most people only see Faro's airport on the way to the Algarve's beaches — a mistake. The real reason to stop is the Ria Formosa, a lagoon of sandbars and salt marsh right at the city's edge; a short boat ride lands you on Ilha Deserta, a near-empty barrier island with one restaurant and miles of open beach. The lagoon holds one of the world's densest seahorse populations. In the walled old town, the Igreja do Carmo hides the Capela dos Ossos, a small chapel lined with the bones and skulls of more than 1,200 monks. Eat cataplana — seafood stewed at the table in a hinged copper pan. Come May–June or September–October: warm enough to swim, far thinner crowds than the July–August crush, and fares well below the peak.
