Ibiza is two islands in one. The clubs around Sant Antoni and Playa d'en Bossa — Pacha, Amnesia, Ushuaïa — are real and enormous, but the part worth your time is Dalt Vila, the fortified hilltop old town above Ibiza Town, ringed by 16th-century Renaissance walls and a UNESCO site since 1995. Head to the quiet north (Santa Gertrudis, Sant Joan) and it's a different place entirely: pine hills, hippie markets, near-empty coves. Order bullit de peix, the fishermen's stew served in two courses — the fish and potatoes first, then rice cooked in the broth. Come in May, June, or September: warm sea, open clubs, and fares well below the brutal July–August peak. Winter is cheap but half the island shuts down.
