Port Vila wraps around Mele Bay on Efate, and the genuinely odd thing to do is just offshore: Hideaway Island has the world's first underwater post office, where you snorkel out to a submerged letterbox and mail a waterproof postcard (400 vatu, stamp included). Eat lap lap, the national dish — grated yam, taro or banana baked with coconut cream in banana leaves; the best comes freshly dug from the stone oven at the back of the Central Market. Wash it down with kava if you're brave. Come May–October, the dry season: warm days around 24°C, low humidity, calm water — though that's also peak season, so book fares early.
