The Faroe Islands sit between Iceland and Norway, and Tórshavn is the smallest capital in the Nordic world. Walk out to Tinganes, the harbour spit where black-tarred, turf-roofed cottages still house government offices on the site of a Viking-age parliament. The dish to try is skerpikjøt — mutton wind-dried in an open shed for five to nine months until it tastes like a cross between blue cheese and aged ham; funky, not for everyone, completely Faroese. For something stranger, drive the Eysturoy tunnel, which has the world's first undersea roundabout, lit as a glowing jellyfish. Come June to August for the only reliably mild weather (still just 7–13°C) and the puffins nesting on Mykines; it's also the priciest stretch. Avoid December to February, when gale-force wind shuts ferries and exposed hikes.
