The other thing to try is kottu — roti chopped and stir-fried with egg, vegetables and spice on a metal plate, so loud the rhythmic clanging is how you find the stalls. Skip the malls; wander Pettah, the dense market quarter behind the port, instead. Come January to March for dry, sunny days — it's also the priciest stretch. Avoid May to September, when the southwest monsoon brings heavy rain.
