Calgary's signature dish is ginger beef — crispy deep-fried shredded beef in a sweet-spicy chili sauce, invented at the Silver Inn restaurant in the mid-1970s and now on Chinese-Canadian menus across the country; the Silver Inn still serves the original. In winter, watch for chinooks — warm Pacific winds that can shove the temperature up 15°C in a few hours, melting snow mid-January. Come for the Calgary Stampede (July 3–12, 2026), ten days of rodeo, chuckwagon races and pancake breakfasts when the whole city dresses Western — but book early, as fares and hotels spike. Otherwise June and September are warm and far cheaper.
