Tashkent's standout isn't a monument above ground — it's the metro. Soviet-built stations are done up in marble, chandeliers, and mosaics, and photographing them was illegal until 2018 because the system doubles as a nuclear shelter. Ride a few stops just to see Kosmonavtlar and Alisher Navoi. The dish is plov (osh): rice slow-cooked with lamb, carrots, and chickpeas in a vast cast-iron cauldron — go early to the Central Asian Plov Centre, since the good batches sell out by mid-afternoon. For markets, Chorsu sits under a huge turquoise dome in the old town. Come April–May or September–November for warm, dry days.
