Barbados has two completely different coasts: the calm Caribbean west, where the water is flat and clear, and the wild Atlantic east at Bathsheba, where the Soup Bowl break draws serious surfers and the shore is all jagged rock and spray. Most visitors only see the west — the east is the more interesting half hour's drive. Eat flying fish and cou-cou, the national dish: steamed fish in spicy Bajan gravy over an okra-and-cornmeal mash. Do it on a Friday night at the Oistins fish fry, a fishing-village street party with grilled catch, rum, and loud music, where locals outnumber tourists. Come January to April for the driest, sunniest weather — also the priciest and busiest. May and November are the smart compromise.
