Busan is South Korea's biggest port and its beach city, strung along the southeast coast. The dish to order is milmyeon — cold, chewy wheat noodles in icy broth, invented here by North Korean refugees during the Korean War when buckwheat ran out and only American wheat flour was around; the same displacement gave Busan its pork-and-rice soup, dwaeji gukbap. Eat both near Jagalchi, Korea's largest fish market. Gamcheon Culture Village, a hillside grid of pastel houses, was a refugee settlement too, not built for the cameras it now draws. Come in October: the film festival (BIFF) is on, the Gwangalli fireworks light the bay, the weather's stable and beaches are usable without the August crush. Skip late June through July — that's jangma, the monsoon, and it rains hard.
