Salvador was Brazil's first capital and is the country's deepest center of Afro-Brazilian culture — capoeira and the Candomblé religion both took shape here. The Pelourinho is the postcard old town, but the honest draw is what fills it: eat acarajé, black-eyed-pea fritters deep-fried in orange dendê (palm) oil and split open with shrimp, vatapá and a spoon of hot pepper, sold from street stalls by baianas in white dresses. Ride the Elevador Lacerda between the cliff-top upper city and the port below. Go September to March for warm, drier days; April to July is the wet season, with heavy short downpours. Carnival (February/early March) is one of the world's biggest — street parades behind trios elétricos, not a stadium event like Rio.
