Brussels is the home of lambic — sour, wild-fermented beer brewed only here and in the surrounding Senne valley, where airborne yeast does the work no brewer can replicate. Cantillon, the city's last working lambic brewery, still makes gueuze the old way and lets you walk through it. Skip the Manneken Pis (it's the size of a toddler and mobbed); the real draw is the Grand-Place, a square ringed by gilded guildhalls. Eat stoofvlees — beef slow-cooked in dark beer — with the fries that are actually Belgian, not French. May and September give the mildest, driest weather; August is pleasant (around 23°C) and, in even years like 2026, brings the Flower Carpet, a million begonias laid across the Grand-Place mid-month.
