Jerez is where sherry comes from — the English word is just a mangling of "Jerez." Skip the slick tourist flamenco shows and go to a tabanco instead: these are old sherry taverns that pour wine straight from the barrel, and several (Tabanco El Pasaje is the classic) host live flamenco for the price of a glass. Order a copa of fino or amontillado, dry and cold. The other thing worth planning around is the Royal Andalusian School of Equestrian Art, whose trained horses perform a choreographed show ("dancing horses") most Tuesdays and Thursdays at noon. Come in spring or autumn; February brings the Festival de Jerez, the country's big flamenco festival. Avoid July and August, when inland Andalusian heat regularly tops 40°C and the city empties out.
