🌍 About Phú Quốc

Phú Quốc is Vietnam's fish-sauce capital — the island's *nước mắm* is so specific it has protected-origin status, fermented from black anchovies in wooden vats you can tour at the factories near Dương Đông. The dish to order is *gỏi cá trích*: raw herring sliced thin, tossed with shredded coconut, herbs and peanuts, then wrapped in rice paper and dunked in that same fish sauce. Eat it at Hàm Ninh, the stilt-house fishing village on the east coast, rather than a resort. The island also grows much of Vietnam's black pepper, so the farms are a real stop, not a gimmick. Come November to March: dry, sunny, calm seas, water around 26°C — peak conditions but also peak prices, so a cheap fare in that window is the real win. Skip June to September, when the southwest monsoon brings heavy rain and rough water.
