Changsha is the Hunan capital and the spiritual home of Chinese chili cooking — hotter and more numbing than Sichuan, locals will tell you. The dish to get is stinky tofu: fermented black, deep-fried, drowned in chili. Huogongdian is the famous spot, and yes, Mao ate there. Don't skip Mao's red-braised pork belly either, sweet-savory and slow-cooked. The real sight is Orange Isle in the river, the world's largest inner-city island, anchored by a 32-meter granite head of a young Mao. From September to November there's a free fireworks show over the water on Saturday nights.
