Santorini is the rim of a volcano — the cliffs everyone photographs are the inside wall of a caldera left when the island's center collapsed in a massive eruption around 1600 BC. The volcanic soil grows the Assyrtiko grape into vines coiled into low basket shapes (kouloura) against the wind, making a sharp, mineral white worth a tasting. Eat fava, the silky yellow split-pea purée with capers and raw onion, and tomatokeftedes, fritters of the island's tiny intense cherry tomatoes. Oia gets the sunset crowds; Akrotiri, a Bronze Age town frozen under ash, is the quieter thing to see. Come May–June or September–early October: warm sea, fewer cruise ships, better fares. Skip July–August, when crowds and prices peak and the caldera path is shoulder-to-shoulder.
