Seek out a taula: a massive T-shaped stone slab unique to the island, like Torralba d'en Salord, with no proven parallel anywhere. Eat caldereta de llagosta, the lobster stew that's the island's signature dish, and buy a wedge of Mahón cheese, rubbed with paprika and olive oil. The lobster is the catch: it's protected and only landed March–August, so the dish you came for and the warm beach weather arrive together. Come May–June or September — sea still warm, prices and crowds down. July–August the south-coast calas get packed and fares spike; winter is calm but many restaurants close.
