Fortaleza is northeast Brazil's beach capital, and the local ritual is Praia do Futuro — a long city beach lined with *barracas*, open-air seafood halls with tables in the sand. Go on a Thursday, "Dia do Caranguejo," when whole tables crack mallets over crab cooked in coconut milk; that's the dish to order, not the generic fish plate.
