But the thing locals will tell you to do is rent a bike and ride the full 14km loop on top of the Ming city wall, the most complete one left in China. Eat in the Muslim Quarter, settled by Hui traders centuries ago: get roujiamo, the shredded-pork flatbread that beats any "Chinese hamburger" abroad, and belt-wide biang biang noodles. Come March–May or September–November for warm, dry days. Skip July–August: 40°C heat and the entire country's summer holidays.
