Thessaloniki is Greece's second city and its food capital — home to Aristotle University, the largest in the Balkans, so it runs younger, livelier and cheaper than Athens, with dinners that rarely start before 9pm. Begin the day with bougatsa: warm filo wrapped around semolina custard, dusted with sugar and cinnamon, eaten standing at the counter. The quarter that actually sets the city apart is Ano Poli, the Upper Town that survived the 1917 fire that flattened the center below — steep lanes of Ottoman houses inside the old Byzantine walls, with the Trigonion Tower looking out over the Thermaic Gulf. Come April–May or September–October: warm, walkable, and the cheap-fare months line up with the best weather. Skip July and August, when the city bakes around 35°C and heatwaves push past 40.
