🌍 About Valencia
Valencia invented paella, and the local version isn't the seafood one — paella valenciana is chicken, rabbit, snails and beans, cooked over wood near the Albufera rice paddies just south of the city. Order that, not the tourist marisco. The city's strangest feature is the Turia: after a catastrophic 1957 flood the river was diverted out of town, and the dry bed became a 9km park that curves through the center, ending at Calatrava's white City of Arts and Sciences. Cool off afterward with horchata, a sweet drink pressed from tiger nuts. Come April–June or September–October for warm, calm weather; July–August sits above 30°C. For the spectacle, mid-March is Las Fallas, when giant satirical sculptures are paraded and then burned in the streets on the 19th.
