🌍 About Valencia

Valencia invented paella, and the local version isn't the seafood one — paella valenciana is chicken, rabbit, snails and beans, cooked over wood near the Albufera rice paddies just south of the city. For the spectacle, mid-March is Las Fallas, when giant satirical sculptures are paraded and then burned in the streets on the 19th.
