Manila has the oldest Chinatown in the world — Binondo, founded by the Spanish in 1594 and still the best place in the city to eat. Come January to April for the dry, cooler stretch (24–31°C, almost no rain); June to October brings the monsoon and real typhoon risk, so a cheap wet-season fare can buy you a washout.
