The Bardo Museum holds the world's largest collection of Roman mosaics — rooms of them, lifted from Carthage, El Jem and Dougga, some 2nd-century, in a former bey's palace. That's the reason to come. Then Carthage itself, the Phoenician city Rome flattened, now ruins spread along the Gulf: the Byrsa hilltop, the Antonine baths, the Punic ports. Sidi Bou Said, the blue-and-white clifftop village next door, is worth it for bambalouni — a hot sugared doughnut sold from a cart at the top of the hill. Eat brik: paper-thin pastry folded around tuna and a runny egg, deep-fried, eaten with your hands. Come spring or autumn — March-May or September-October — for warm, walkable days; summer bakes the open ruins, and winter is cool and quiet but fine.
